Traditional Foods Kitchen

Please note: as of November 2011 home delivery of our products has been suspended indefinitely due to my maternity leave and the demands of (now) not one, but two young children. Beginning the first week of January 2012 I will offer a very limited array of products for customers who can pick up from me in Bay Ridge, Brooklyn. It is recommended that you email me with your preferences in advance and I will do my best to accommodate. Or you can check back here each week to see what I have available (scroll down to the list of items for the coming week).

Remember, quantities are extremely limited so it is best to reserve your items in advance by email. I wil mainly be making chicken broth, at the rate of one batch (8-10 quarts) per week. If you would like beef or fish broth you must pre-order a minimum of 4 quarts.

Beginning January 1, 2012 --> here is a list of items I will have every week for pick-up (please note: all items are organic and are packaged in glass with the exception of the broth; additional glass deposit applies):

Traditional bone broth:

chicken broth -- 10.00/quart (please give me advance notice if you would like broth fresh, in glass, rather than frozen in plastic; an additional glass deposit will apply)

*beef broth & fish broth -- 10.00/quart (these broths are not available every week but must be pre-ordered; a 4-quart minimum applies for each) I will not be making beef broth again until after Feb. 7.

Dairy:

cream-top yogurt (cow's milk) -- 7.00/quart + 2.50 jar deposit

whey (cow's milk) -- 3.00/pint + 2.00 jar deposit

kefir grains -- FREE! let me know if you want to come pick some up

Lactofermented:

digestive tonic (lactofermented vegetable medley juice) -- 7.00/quart, 4.00/pint + jar deposit (2.50/2.00)

coconut-olive mayo (lactofermented) -- 12.00/pint + 2.00 jar deposit

Healthy fats:

coconut oil (semi-refined, expeller-pressed, no flavor) -- 4.00/half-pint + 1.50 jar deposit

Here is a list of items I make for our family and can make extras of for you (please let me know by email what you are interested in and I will set some aside for you the next time I make it). Not enough time to cook? Just learning about traditional foods? At Traditional Foods Kitchen we offer limited quantities of a selection of wholesome carefully-prepared traditional foods (or modern foods using nutrient-dense ingredients) that are available exclusively for pick-up and home delivery. All items are prepared fresh, so we usually need a few days to get your order together. Of course we also offer cooking classes and downloadable health and recipe guides so you can learn how to make all these foods for yourself and your family!

Taste preferences

While most of our products will taste familiar and yummy on the first try, please keep in mind that some of our items (especially the fermented foods) may seem strange to you at first. We cannot offer refunds for items you just don't "like" the taste of. Of course, if something is wrong with the product we will replace it. Plan on offering your taste-test items to a friend or family member in case it doesn't turn out to be what you had in mind (though we recommend giving it a few tries as you will grow to like many of these new foods with time). You can always make special requests based on your taste preferences and any dietary restrictions (i.e. no garlic, no sunflower seeds), and we will do our best to accommodate.

Special diets

All of our items are gluten-free and grain-free; none of the foods we prepare come in contact with gluten or are prepared with gluten-containing ingredients (however, the kitchen is not gluten-free). For individuals avoiding meat products, many of our items are vegetarian-friendly; check the notes underneath each listing. Our only purely vegan items are kombucha, fried apple butter, deodorant, tooth powder, and coconut oil.

Our ingredients

We source as many of our ingredients as we can from organic, local sources, and also rely on Wilderness Family Naturals, Whole Foods, and local health food stores for some items. We do our best to use organic ingredients (or better) whenever humanly possible, and for animal foods we use only pastured/grass-fed unprocessed products. Read about all our ingredients here.


Shelf life

  • broth -- keep frozen for long-term storage; once thawed, reboil before using and use within 7 days for chicken or beef, and within 5 days for fish

  • blueberry muffins -- good in the refrigerator for at least 4-5 days; best reheated in a toaster oven and served with butter or our sweet or plain yogurt cheese
  • meat products -- same as all other meat products (keep frozen for long-term, use within 2-3 days after thawing)

  • yogurt & yogurt cheese -- use your sense of smell and taste if you keep these past a week. The yogurt will likely last much longer, but if it or the cheese develops a fizzy slightly beer-like flavor (a little like sourdough starter, a fermenty sort of taste, or a slight vomit-like flavor) then discard and do not eat. There will be bacteria present that are likely to cause stomach cramps and maybe vomiting/diarrhea (not "bad" bacteria, but bacteria that the average American digestive system doesn't handle well).

  • whey -- lasts at least 6 months, probably longer. Discard if a fermenty/fizzy smell or flavor develops.

  • fermented veggies & veggie tonic -- the tonic lasts indefinitely. The veggies may get softer with time, but generally they are good for a few months. The flavor may get stronger and more sour with time.

  • pate -- open and break the butter seal within 1 week of delivery, and use within 3-5 days (best within 3 days). You can scrape off the part that has been exposed to air to get to the part that's still good, if using longer than 3 days.

  • ginger ale & kombucha -- these last indefinitely (don't go "bad") but will get less sweet with time; keep in fridge

  • beet kvass -- should also last indefinitely. If a strange taste develops don't use, but I've never had this happen.

  • ketchup -- best within 2 weeks. If a mold or film forms, scrape off the top.

  • mayo -- best within 2-3 weeks. A fermenty fizzy flavor may develop if kept a long time, and it won't taste as good. But not necessarily harmful (has never made me sick and I'm pretty sensitive). Will eventually grow mold.

  • chocolates & crackers -- both last a really long time! Keep the chocolates in the freezer, and the crackers in a kitchen cupboard. I have had crackers that still taste good after 2 weeks, but you will probably eat them up much more quickly. In summer months they may taste stale more quickly.

  • vanilla pudding -- 5 days max! It will start to separate after this time.

  • BBQ sauce -- lasts indefinitely in fridge

  • butternut custard -- best within about 5 days

  • apple butter -- the coconut oil preserves this pretty well, but you will probably use it up fast

  • quinoa pilaf -- good for 1 week or more in the refrigerator (I have never had this go bad, so not sure what the signs would be)
  • refried beans -- will probably keep no more than 5-6 days in the refrigerator; a sour, off taste/smell will develop
  • coconut oil, lard, bacon fat -- last indefinitely

The most therapeutic of our broths, this one is made using heads, flesh, and bones from fresh wild-caught fish, raw apple cider vinegar, organic carrots, onions, white wine, organic thyme and bay leaves, Celtic sea salt, and filtered water. This broth is rich in minerals that nourish the whole body, and is especially good for the eyes and for thyroid health. It has a rich but delicate flavor and is excellent consumed as an accompaniment to meals or a warm beverage "snack," as a base for soups and seafood stews, for poaching fish, or for making sauce reductions for seafood dishes.

DAIRY

Cream-top yogurt

cream-top yogurtOur luscious, creamy yogurt is made using fresh unprocessed organic milk from grass-fed cows, and is cultured for a full 24 hours, making it suitable for individuals on the GAPS diet (at the appropriate stage) and others who are sensitive to lactose and casein. Easily-digested, probiotic, creamy, nourishing, and very mild-tasting. The only ingredients we use are milk and our starter yogurt, which contains live active cultures. All commercial yogurt is fermented no longer than 12 hours (usually less); the 24-hour culturing period makes ours unique and incredibly digestible. Our yogurt is cultured in glass and comes in the jar we make it in. Lasts great in the refrigerator, but you will want to eat it right up! Top with our cinnamon apple butter for a sweet treat, enjoy it plain, or serve as a savory sauce combined with herbs, lemon, cucumber, olive oil, and sea salt.

garlic thyme yogurt cheeseMade from our homemade cream-top yogurt, this tangy spreadable cheese is laced with tiny leaves of fresh thyme, a little Celtic sea salt, and plenty of fresh garlic (great for boosting your immune system!). Each pint-size batch is made from one quart of yogurt. Delicious as a garlicky topping for pasta, and fabulous with our savory nut-flour crackers.

Honey-nut & plain honey yogurt cheese

Made from our homemade cream-top yogurt, this tangy spreadable cheese is lightly sweetened with raw honey and topped with a handful of crushed organic almonds. Each pint-size batch is made from one quart of yogurt. We love our honey yogurt cheese as a topping on fresh or frozen berries, and think it's absolutely delicious with our sweet nut-flour crackers!

Beverages

Organic kombucha

Our kombucha is just a bit sweet with a slight floral flavor, and has a pleasant, almost spicy, kick to it. It is brewed using a SCOBY "mushroom" or "mother," organic black tea, and organic dehydrated cane sugar juice. Long prized in Eastern Europe and other parts of the world, "tea kvass" (kombucha) is becoming popular in the West for its powerful detoxifying benefits. The SCOBY "mushroom" converts the tannins in tea into glucuronic acid, the most powerful detoxifier available for consumption; the sugar is used by the SCOBY for food. The end products contains no caffeine and is very low in sugar; however, it may be allowed to sit at room temperature for a few days to produce a completely sugar-free vinegar-like beverage. Use medicinally for all types of digestive ailments, or enjoy as a refreshing beverage with meals (we recommend diluting it). Our kombucha comes in glass Pellegrino bottles (25.3 oz).

Ginger ale (lactofermented)

Spicy, lightly carbonated, and mildly sweet, our ginger ale is made using a process called lactofermentation, which means it is rich in enzymes and probiotic benefits. One of the "original" sports drinks, lactofermented ginger ale is electrolyte-rich, which means it is actually more hydrating than water and the perfect beverage for replenishing fluids lost during strenuous exercise. We make ours using raw honey, fresh ginger root, fresh-squeezed lime juice, whey, filtered water, a pinch of Celtic sea salt, and glass-bottled Pellegrino to dilute it to the perfect level of sweetness (although we recommend further dilution for kids and adults sensitive to sweeteners). Ginger ale comes in a glass 25.3-oz. Pellegrino bottle.

Beet kvass (lactofermented)

beet kvassWe can say with confidence that this is the best beet kvass around! This traditional and refreshing Russian beverage is the perfect tonic for detoxifying and cleansing the liver, and an excellent antidote for morning sickness. In Europe it is used in cancer therapy.

We make ours the old-fashioned lactofermented way, with fresh beets, Celtic sea salt, whey, filtered water, and garlic cloves. The rich purple color will delight you as much as the fresh, salty, slightly sour flavor, and the wonderful probiotic benefits -- enjoy a few ounces morning and evening and reap the health benefits! Or use in place of vinegar in salad dressing, and as a topping on soups.

The perfect tonic for upset stomach, hyperacidity, abdominal cramping, and general gastrointestinal discomfort. Great for people who have tummy trouble from going too long without eating! Enjoy a few ounces 15 minutes before each heavy meal and you will have greatly improved digestion (an essential part of each meal for blood type A people, who tend to produce less stomach acid).

This tonic is a natural byproduct of our Vegetable Medley; it contains juices from cabbage, carrot, broccoli, and cauliflower, as well as sea salt and whey.

Condiments & SAUcES

Coconut-olive mayonnaise (lactofermented)

lactofermented mayonnaiseA luscious yellow mayonnaise with the perfect texture and consistency, made from a 70-30 blend of expeller-pressed organic coconut oil (no coconut flavor) and organic cold-pressed extra-virgin olive oil. Coconut oil offers superior immune-boosting properties due to its high lauric acid content, and raw olive oil is an excellent source of vitamin E, oleocanthal, and polyphenols. Our mayo also includes pastured eggs and egg yolks, whey from pastured milk, Celtic sea salt, and fresh lemon juice. Perfect for sandwiches, deviled eggs, dips, and dressings, or as a nutrient-dense treat straight from the jar! Our mayonnaise is lactofermented and boasts probiotic benefits. Ketchup (lactofermented)

lactofermented ketchupSurprisingly delicious, satisfying, and amazingly perfect as a substitute for the commercial varieties, this ketchup is made using organic tomato paste (from a jar, not a can), whey, Celtic sea salt, Rapadura, cayenne pepper, fresh garlic, traditional fish sauce (for that savory-salty flavor), and a little filtered water for the perfect consistency. Our ketchup offers probiotic benefits and comes in a pint-size glass jar. This is a must for any household with kids or adults who love ketchup! Serve with fresh potatoes sliced and fried in pastured chicken fat (schmaltz), or add some prepared horseradish and use for dipping shrimp.

Health indications: because store-bought ketchup (even organic) isn't good for you!

Lactofermented vegetable medley

lacto-fermented vegetable medleyA delicious, tangy mix of sliced cabbage, carrots, broccoli, and green beans. Our medley is fermented for 5-7 days before refrigeration. We use only fresh vegetables, whey, Celtic sea salt, and filtered water. These salty-sour veggies are delicious with meats and eggs, and assist with digestion of cooked foods, particularly animal proteins. Enjoy the probiotic-rich juice in small amounts as a digestive tonic. *Note: colors fade slightly during the fermentation process; vegetables pictured have just been packaged.

Barbecue sauce

BBQ sauceTrying to eat healthy without giving up delicious barbecue? If so, it's definitely time to toss those store-bought bottles of sauce which are filled with unhealthy sweeteners, refined salt, and additives of all kinds. Our special barbecue sauce is made using only natural sweeteners (a blend of local maple syrup, raw local honey, and organic blackstrap molasses), herbs and spices, organic Worcestershire sauce, raw apple cider vinegar, Celtic sea salt, and lard from pastured pigs. It all comes together as if by magic to create a spicy-sweet sauce that's mouth-wateringly delicious on ribs (we recommend pastured pork spare ribs). *Note: heat the sauce gently before serving by placing the jar on the back of a hot stove or in a pot of water over very low heat. Because it contains no additives or preservatives it may have a thin layer of fat on top when chilled.

We use organic pinto beans that have been soaked 24 hours and given a long slow simmer in our homemade chicken bone broth. Sprouted quinoa contains all the essential amino acids and is gluten-free! Our pilaf starts with organic quinoa sprouted over a 5 day period to eliminate the peculiar flavor quinoa often has. Then it's steamed in organic pastured chicken broth with sauteed veggies. Contains organic veggies (celery, onions, carrots), organic pastured pork lard, our homemade pastured chicken broth, organic curry powder, and Celtic sea salt. Reheat in a toaster oven and top with butter, or heat in a small amount of broth. With only three ingredients (organic raw cacao, raw local honey, and expeller-pressed organic coconut oil) they will amaze you with their simplicity and make your health-conscious taste buds rejoice. (Since they're very rich and contain small amounts of caffeine, we do recommend moderation.) Each pint of treats contains about 3/4 cup of raw cacao, which is naturally rich in magnesium. Pastured lard (pig fat)

Pure white, with a mild flavor perfect for multipurpose use! At our house we use lard to fry everything from meatballs to pork chops; also excellent for potatoes, and unbeatable for refried beans. Pastured lard is one of our best sources of vitamin D (second only to cod liver oil!), and boasts at least 1100 IUs of this essential fat-soluble vitamin per tablespoon.

Bacon fat

Home rendered from organic and/or pastured organically-raised bacon. Use for frying oat cakes (form leftover congealed oatmeal into patties), for French toast or pancakes, in savory baked goods, and for frying or sauteing other foods where a slight salty/bacon flavor is desirable. We think bacon fat is unbeatable for frying cabbage! Not quite as high in vitamin D as pastured lard, but still a good source of this important fat-soluble vitamin.

A neutrally-flavored expeller-pressed organic coconut oil. Great source of lauric acid for immune health, and fabulous for fighting parasites, fungi, and yeasts in the gut. Add to smoothies, use for low-temperature sauteing and frying, and serve as a topping on hot whole grain breakfast cereal. Perfect for frying apples and pears with cinnamon.

Body Care

Coconut oil deodorant

coconut oil deodorantAt long last -- a natural deodorant that really works, even for men! And even better, it's made entirely of edible ingredients, so it presents absolutely no risk to your health. Perfectly safe and non-irritating even when applied after shaving, and guaranteed to be suitable for nursing mothers (it won't negatively affect breastmilk). We use organic coconut oil, organic arrowroot powder, and baking soda -- that's it. Comes in a 1 oz. glass jar; should last about one month for two people. In temperatures above 76 degrees F, the coconut oil will liquefy, so you will need to give it a quick stir with your finger before applying. The rest of the time it has the perfect consistency. *NOTE: use sparingly only on armpit areas where hair grows, rub in thoroughly, and allow the deodorant to dry before dressing to avoid any risk of creating white marks on the inside of clothing.

Natural tooth powder

tooth powderMade from baking soda, Celtic sea salt, and peppermint essential oil, our tooth powder will get your teeth clean safely and leave your mouth refreshed. Mild and gentle enough even for highly sensitive teeth. Equivalent to about 1/4 cup of powder, or about 2.4 ounces dry weight, this amount will last a small family for a few months. *Note: wet your toothbrush, then sprinkle on a pinch of the powder. It will taste quite salty at first, but you will become accustomed to the taste. Remember that getting your teeth really clean requires the action of bristles on teeth for several minutes (we have seen great results with the Oral B Contours toothbrush).
